The Pineau des Charentes is obtained by blending in oak casks approximately three quarters of volume of grape juice and one quarter of aged cognac. It can be drunk young (2 years). At this stage it is fresh and fruity. It improves with ageing. Traditionally it is drunk before meals; many gastronomes find that its smoothness is a prefect complement to ‘foie gras’ and its sweetness brings out the aromas of certain fruits (melon, strawberries). Its fruity style brings a pleasant freshness of a plate of oysters.
